Poblano Soup from New Mexico

Yesterday we worked outside on the picnic table; worked on food that is. Our lunch would be Poblano soup, a wonderful recipe from our friend Don. Thanks Don. I call it Don's Poblano soup.


 In Deming there is a very popular grocery store call "Peppers" where I was able to pick up fresh Poblanos, and super fresh Cilantro.



Once charred we then had to scrape off the charged bits and slice the peppers into small pieces.

Onions, creamed corn, lots of cilantro, soup is ready for lunch, Yummy!
Topped off the soup with a fresh bean and sweet potato burrito and home made sauce.
Food doesn't get better than this when eaten in the great outdoors. 

Today (Friday) we leave for Phoenix and our friends Mike and Sheri.
