Mexican Food

We enjoy the variety of foods available to us as we travel and Mexican food is at the top of the list. Today we went into Deming with the intention of eating at yet another of the local restaurants that prepare authentic Mexican food. We shopped for groceries and everything looked so good Mary decided she'd try her hand at making some herself. A very kind lady explained to Mary what to get and how to prepare everything.


First we bought this bag of locally grown, dried red chilli peppers.


A bag of 30 fresh out of the oven corn tortilla shells cost $1.50


Bring the peppers to a boil on the stove .............................


add a few fresh cloves of garlic, then run them through the blender. Red hot chilli sauce as fresh as you can get it. Did I mention hot!


Cook chicken or beef, your choice ........................


add some cheese ..........................


and lunch is ready Care for a sample? The cheese is a Mexican favourite, Munster, and very inexpensive at
$0.99 a pound. Very good. Melts up beautifully.
